🇫🇷 Velouté de Champignons (Mushroom Soup)
A silky, elegant mushroom soup with rich, earthy flavor and a creamy finish.
Ingredients:
• 300 g mushrooms (button or cremini), sliced
• 1 small onion, chopped
• 2 tbsp butter
• 2 tbsp flour
• 500 ml vegetable or chicken broth
• 100 ml heavy cream
• Salt and pepper
• Thyme for garnish (optional)
Instructions:
1. Sauté onion and mushrooms in butter until softened.
2. Stir in flour and cook for 1 minute.
3. Gradually add broth, stirring to avoid lumps.
4. Simmer for 15 minutes, then blend until smooth.
5. Stir in cream, season, and garnish with thyme.
