FUNFETTI CHEESECAKE BARS
Crust:
1 ½ cups Golden Oreo crumbs (or graham crackers)
¼ cup butter, melted
Filling:
16 oz cream cheese, softened
½ cup granulated sugar
2 large eggs
½ cup sour cream
2 tsp vanilla extract
½ cup rainbow sprinkles

Instructions:
1. Preheat oven to 325°F (165°C). Line an 8x8 baking pan with parchment.
2. Mix cookie crumbs and melted butter. Press into the bottom of the pan.
3. In a bowl, beat cream cheese and sugar until smooth. Add eggs, one at a time, then sour cream and vanilla.
4. Fold in rainbow sprinkles.
5. Pour over crust and smooth the top.
6. Bake 30–35 minutes or until center is set. Cool completely, then refrigerate 2–4 hours. Slice into bars.
