Spicy Garlic Turkey with Roasted Broccoli Penne
Fiery Garlic-Infused Ground Turkey with Oven-Roasted Broccoli Penne Pasta
Ingredients:
1 lb ground turkey
12 oz penne pasta
2 medium heads broccoli, cut into florets
6 cloves garlic, minced (divided)
1 medium onion, diced
1 red bell pepper, diced
2-3 tablespoons olive oil, divided
1-2 teaspoons red pepper flakes (adjust to taste)
1 teaspoon dried oregano
1 teaspoon paprika
½ teaspoon ground cumin
3 tablespoons tomato paste
½ cup low-sodium chicken broth
2 tablespoons soy sauce
1 tablespoon honey
¼ cup fresh basil, chopped
¼ cup grated Parmesan cheese (optional)
Salt and freshly ground black pepper to taste
2 tablespoons olive oil for roasting broccoli
Lemon zest from half a lemon
Directions:
Preheat oven to 425°F (220°C).
Toss broccoli florets with 2 tablespoons olive oil, half the minced garlic, salt, and pepper on a baking sheet. Spread in a single layer and roast for 20-25 minutes until edges are crispy and slightly charred, tossing halfway through.
Meanwhile, bring a large pot of salted water to boil. Cook penne according to package instructions until al dente. Reserve ½ cup pasta water before draining.
In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add ground turkey and break it apart with a wooden spoon. Cook until no longer pink, about 5-7 minutes.
Add onion and bell pepper to the skillet and cook until softened, about 3-4 minutes.
Add remaining garlic, red pepper flakes, oregano, paprika, and cumin. Cook until fragrant, about 1 minute.
Stir in tomato paste and cook for 1-2 minutes until it darkens slightly.
Pour in chicken broth and soy sauce, scraping up any browned bits from the bottom of the pan. Stir in honey and reduce heat to medium-low. Simmer for 5 minutes until sauce thickens slightly.
Add drained pasta and roasted broccoli to the skillet. Toss everything together, adding reserved pasta water as needed to create a silky sauce that coats everything evenly.
Remove from heat and stir in fresh basil and lemon zest.
Serve hot, topped with grated Parmesan cheese if desired.
