Ingredients:

• 3 large leeks (white parts only)
• 30 g butter
• 2 eggs
• 150 ml crème fraîche
• Salt and pepper

Instructions:
1. Preheat oven to 180°C (350°F). Line a tart tin with pastry.
2. Slice leeks and sauté in butter until soft.
3. Beat eggs with crème fraîche, salt, and pepper.
4. Spread leeks in the tart shell, pour over egg mixture.
5. Bake for 30–35 minutes until golden.
