Mediterranean Lentil Salad

1 cup uncooked green lentils
1 large cucumber, diced
1 red onion, diced
Flat leaf parsley, chopped
A handful of cherry tomatoes, halved
A handful of Kalamata olives, chopped
1/3 cup crumbled feta cheese
1 tablespoon extra virgin olive oil
1 tablespoon red wine vinegar
Juice of one lemon
2 teaspoons Dijon mustard
1 teaspoon honey
1 teaspoon dried oregano
Salt and freshly ground black pepper, to taste

Directions:
1. Rinse lentils and cook them in three cups of water, bringing it to a boil and simmering for 20 minutes.
2. While cooking, chop the vegetables and herbs.
3. Drain and cool the lentils.
4. Combine lentils with vegetables and crumble feta cheese on top.
5. Whisk olive oil, vinegar, lemon juice, mustard, honey, and oregano for the dressing.
6. Pour dressing over salad, toss, and season with salt and pepper.
