1 lb fresh strawberries (choose large ones)
8 oz cream cheese, softened
1/3 cup powdered sugar
1/2 tsp vanilla extract
1/4 cup crushed graham crackers (for topping)
Optional: a drizzle of melted chocolate or caramel for extra flair

Prep the strawberries:
Rinse and dry the strawberries. Slice each one in half lengthwise and carefully scoop out a small well from the center of each half using a melon baller or spoon.
Make the cheesecake filling:
Beat the cream cheese, powdered sugar, and vanilla until smooth and fluffy.
Fill 'em up:
