🍗 Lemon-Herb Chicken
• 2 boneless, skinless chicken breasts, cut into bite-sized pieces

• 1 tbsp olive oil
Salt & pepper to taste



🧄 Coconut Alfredo Sauce
• 2 tbsp butter
• 1 clove garlic, minced 🧄
• ½ cup coconut milk (full-fat for creaminess)
• ½ cup heavy cream or half-and-half
• ¼ cup grated Parmesan cheese
• 1 tsp chopped fresh dill (or ½ tsp dried dill)
• 1 tsp dried oregano
• Zest of ½ lemon 🍋
• Salt & pepper to taste



🥔 Garlic-Rosemary Roasted Potatoes
• 2 medium Yukon Gold potatoes, diced
• 1 tbsp olive oil
• 1 clove garlic, minced 🧄
• 1 tsp chopped fresh rosemary (or ½ tsp dried rosemary)
• 2 tbsp grated Parmesan cheese
• Salt & pepper to taste



🍃 Garnish
• 1 tbsp fresh parsley, chopped
• Lemon wedges for serving 🍋



🔥 Instructions

1. Marinate & Grill the Chicken
• In a bowl, mix olive oil, lemon zest, lemon juice, garlic, oregano, salt, and pepper.
• Toss chicken pieces in the marinade and let sit for at least 20 minutes.
• Grill or sauté over medium heat for 4–5 minutes per side until fully cooked.
• Keep warm.



2. Make the Coconut Alfredo Sauce
• In a medium saucepan, melt butter over medium heat.
• Add garlic and sauté until fragrant.
• Stir in coconut milk, heavy cream, Parmesan cheese, dill, oregano, and lemon zest.
• Cook until the sauce thickens slightly, about 5–7 minutes.
• Season with salt and pepper to taste.
• Keep warm.



3. Roast the Potatoes
• Preheat oven to 400°F (200°C).
• Toss diced potatoes with olive oil, garlic, rosemary, Parmesan, salt, and pepper.
Spread on a baking sheet and roast for 20–25 minutes, flipping halfway through, until golden and crispy.



4. Assemble the Plate
