Cheesy Beef Tacos
Ingredients
For the Beef:
2 lbs beef brisket or chuck roast
1 onion, chopped
4 cloves garlic, minced
2 cups beef broth
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
For the Tacos:
8-10 corn tortillas
2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
Oil for frying (optional)
Instructions
In a slow cooker, combine the beef, chopped onion, minced garlic, beef broth, chili powder, cumin, salt, and pepper.
Cook on low for 8 hours or until the beef is tender and easily shredable.
Once cooked, remove the beef from the slow cooker and shred it with two forks. Set aside the meat and strain the cooking liquid if desired.
Heat a skillet over medium heat. If using oil, lightly grease the pan.
Place a tortilla in the skillet, add a layer of shredded beef, and top with cheese.
Fold the tortilla in half and cook until golden brown and crispy on both sides, about 2-3 minutes per side.
