Spicy Cheesy Shrimp Skillet
Ingredients:
1 lb (450g) large shrimp, peeled and deveined
2 cups broccoli florets
2 tablespoons olive oil or butter
3 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust to spice preference)
1/2 teaspoon chili powder
Salt and pepper, to taste
1 cup shredded cheddar cheese (or a mix of cheddar and mozzarella)
1/2 teaspoon crushed red pepper flakes (optional)
Fresh parsley or cilantro, chopped (for garnish)
Instructions:
Prepare Shrimp and Broccoli:
Rinse shrimp and pat dry.
Cut broccoli into bite-sized florets.
Cook Broccoli:
In a large skillet, heat 1 tablespoon olive oil over medium heat.
Add broccoli and sauté for 3-4 minutes until just tender but still bright green. Remove broccoli from skillet and set aside.
Cook Shrimp:
In the same skillet, add the remaining olive oil.
Add minced garlic and sauté for 1 minute until fragrant.
Add shrimp and season with smoked paprika, cayenne pepper, chili powder, salt, and pepper.
Cook shrimp for 2-3 minutes on each side until pink and opaque.
Combine and Add Cheese:
Return broccoli to the skillet with shrimp. Mix well.
Sprinkle shredded cheese evenly over shrimp and broccoli.
Cover skillet with a lid and cook for 1-2 minutes until cheese melts.
Serve:
Remove from heat, garnish with fresh parsley or cilantro, and sprinkle red pepper flakes if desired. Serve immediately.
