Sweet Corn and Avocado Penne with Turkey
Creamy Turkey Penne with Avocado and Golden Corn
Ingredients:
12 oz (340 g) penne pasta
1 ripe avocado, peeled and pitted
1 cup sweet corn kernels (fresh, canned, or frozen)
1 cup cooked turkey breast, shredded or diced
2 tablespoons olive oil
1 clove garlic, minced
2 tablespoons lemon juice
¼ cup unsweetened plain yogurt (or dairy-free alternative)
Salt and pepper to taste
2 tablespoons chopped fresh cilantro or parsley
¼ teaspoon paprika
¼ teaspoon chili flakes (optional)
¼ cup reserved pasta water
Directions:
Cook the penne pasta in a large pot of salted boiling water according to package instructions. Reserve ¼ cup of the pasta water, then drain and set aside.
In a skillet, heat 1 tablespoon olive oil over medium heat. Add garlic and cook for 1 minute until fragrant. Add shredded turkey and sweet corn. Sauté for 4–5 minutes, stirring occasionally. Set aside.
In a food processor, blend the avocado, lemon juice, yogurt, remaining olive oil, paprika, salt, and pepper until smooth and creamy. Add a bit of pasta water to loosen the sauce if needed.
Return the drained pasta to the pot. Add the creamy avocado sauce and gently stir to coat. Then mix in the sautéed turkey and corn mixture. Adjust seasoning if necessary.
Garnish with chopped cilantro or parsley and chili flakes (if desired). Serve warm.
