For the Cake
β Butter & flour (for prepping pans)
β 3 cups all-purpose flour (450g)
β 3 cups granulated sugar (650g)
β 1Β½ cups unsweetened cocoa powder (155g)
β 1 tbsp baking soda (17g)
β 1Β½ tsp baking powder (8g)
β 1Β½ tsp salt (11g)
β 4 large eggs
β 1Β½ cups buttermilk (350ml)
β 1Β½ cups warm water (350ml)
β Β½ cup vegetable oil (115ml)
β 2 tsp vanilla extract (10ml)
For the Chocolate Cream Cheese Buttercream Frosting
β 1Β½ cups butter, softened (340g)
β 8 oz cream cheese, softened (225g)
β 1Β½ cups unsweetened cocoa powder (155g)
β 3 tsp vanilla extract (15ml)
β 7β8 cups powdered sugar (875β1000g)
β ~ΒΌ cup milk, as needed (60ml)
π Instructions
1: Preheat oven to 350Β°F (176Β°C). Butter and flour three 9-inch cake pans.
2: In a large bowl or stand mixer, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
3: Add eggs, buttermilk, warm water, oil, and vanilla. Beat until smooth and lump-free.
4: Divide batter evenly into the prepared pans. Bake for 30β35 mins, until a toothpick comes out clean.
5: Let cakes cool in pans for 15 mins, then turn out onto wire racks to cool completely.
Make the Frosting:
6: In a large bowl, beat softened butter and cream cheese until fluffy.
7: Add cocoa powder and vanilla extract. Mix until well combined.
8: Gradually beat in powdered sugar, 1 cup at a time. Add milk as needed until frosting is smooth and spreadable.
9: Frost each cooled cake layer, stack, and cover the whole cake with chocolate cream cheese frosting.
