Pumpkin Chocolate Chip Cookies
Ingredients:
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 Tablespoon pumpkin pie spice
- ½ teaspoon salt
- 1 ½ cups granulated sugar
- ½ cup butter, softened
- 1 cup pure pumpkin puree
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 cup semi-sweet chocolate chips
Directions:
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
4. Beat in the pumpkin puree, egg, and vanilla extract until fully combined.
5. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
6. Fold in the chocolate chips evenly throughout the dough.
7. Drop rounded tablespoons of dough onto the prepared baking sheets about 2 inches apart.
8. Bake for 12-15 minutes or until the cookies are set and lightly golden around the edges.
9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Tips:
