Jalapeño Lime Chicken Soup 🌶️🍋
Ingredients:
1 lb boneless, skinless chicken breasts, diced
1 medium onion, chopped
3 cloves garlic, minced
1 jalapeño, seeded and finely chopped
1 bell pepper, chopped
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 tsp ground cumin
1/2 tsp chili powder
1/4 tsp salt
1/4 tsp black pepper
1/4 cup fresh lime juice (about 2 limes)
1/4 cup chopped fresh cilantro
2 tbsp olive oil
Avocado slices, tortilla strips, and extra lime wedges for garnish (optional)
Directions:
In a large pot, heat olive oil over medium heat. Add the diced chicken and cook for 5-6 minutes until browned. Remove from the pot and set aside.
In the same pot, add the onion, garlic, jalapeño, and bell pepper. Sauté for 5 minutes until softened.
Stir in the chicken broth, diced tomatoes, cumin, chili powder, salt, and black pepper. Bring to a boil.
Reduce heat to low, return the cooked chicken to the pot, and simmer for 15-20 minutes until the chicken is cooked through and the flavors are well combined.
Stir in the fresh lime juice and chopped cilantro. Adjust seasoning if needed.
Serve hot, garnished with avocado slices, tortilla strips, and extra lime wedges if desired.
