- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1/2 teaspoon vanilla extract

Directions:

1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
5. In a separate bowl, beat cream cheese, sugar, egg yolk, and vanilla extract until smooth and creamy.
6. Fill each muffin cup halfway with pumpkin batter. Add about a tablespoon of cream cheese filling in the center, then cover with more pumpkin batter until the cup is about 3/4 full.
7. Bake for 20-25 minutes, or until a toothpick inserted in the pumpkin part comes out clean.
8. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
