Seared Scallops with Lemon Garlic Butter Sauce 🧈🍋🧄
Ingredients:
• 1 pound sea scallops, patted dry
• 2 tablespoons olive oil
• Salt and pepper to taste
• 3 tablespoons unsalted butter
• 2 garlic cloves, minced
• 1/4 cup chicken broth or white grape juice
• 2 tablespoons fresh lemon juice
• 1 teaspoon lemon zest
• Fresh parsley, chopped (for garnish)
Directions:
1️⃣ Pat the scallops dry with paper towels and season both sides with salt and pepper.
2️⃣ Heat olive oil in a large skillet over medium-high heat. Add the scallops to the skillet and sear for 2-3 minutes per side, or until a golden crust forms. Remove and set aside.
3️⃣ Reduce the heat to medium and add the butter to the skillet. Once melted, stir in the minced garlic and sauté for 1-2 minutes until fragrant.
4️⃣ Pour in the chicken broth and lemon juice, scraping up any browned bits from the skillet. Simmer for 2 minutes to reduce slightly.
5️⃣ Stir in the lemon zest and return the scallops to the skillet. Spoon the sauce over the scallops to coat.
6️⃣ Garnish with fresh parsley and serve warm with lemon wedges.
