Cheesy Plant-Based Spinach and Artichoke Party Dip
Ingredients:
- 1 cup raw cashews, soaked for 4 hours or boiled for 10 minutes
- 1 cup unsweetened plant-based milk
- 2 tablespoons nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon lemon juice
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 small onion, chopped
- 3 garlic cloves, minced
- 2 cups fresh spinach, chopped
- 1 can (14 oz) artichoke hearts, drained and chopped
Directions:
1. Blend soaked cashews, plant-based milk, nutritional yeast, garlic powder, onion powder, lemon juice, salt, and pepper until smooth. Set aside.
2. Heat olive oil in a skillet over medium heat. Sauté onion and garlic until fragrant and translucent.
3. Add spinach and cook until wilted. Stir in chopped artichoke hearts.
4. Reduce heat to low and mix in the cashew cream. Cook for 2-3 minutes, stirring frequently, until heated through.
5. Serve warm with tortilla chips, bread, or fresh veggies.
