1 cup almond flour (or oat flour for a different texture)
¼ cup vanilla or unflavored protein powder
½ cup pumpkin puree
4 oz low-fat cream cheese, softened
2 tablespoons maple syrup or honey
1 teaspoon pumpkin pie spice

Pinch of salt
Optional: ¼ cup dark chocolate chips, melted (for drizzling)
Directions:

Combine Ingredients: In a large mixing bowl, combine the almond flour, protein powder, pumpkin puree, cream cheese, maple syrup, pumpkin pie spice, vanilla extract, and salt. Stir until smooth and well combined. The mixture should be slightly firm.

Form the Balls: Using your hands or a small cookie scoop, roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.

Optional Chocolate Drizzle: Melt the dark chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth. Drizzle the melted chocolate over the pumpkin cheesecake balls.
