Ingredients:
1 1/2 cups graham cracker crumbs
1/2 cup melted butter
2 tablespoons sugar
3 (8 oz) packages cream cheese, softened
1 cup sugar
3 large eggs
1/4 cup lime juice
1 teaspoon lime zest
1 cup mango puree
Mango chunks and lime slices for garnish
Directions:
Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press mixture into the bottom of the prepared pan.
In a large bowl, beat the cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition.
Stir in lime juice and lime zest. Fold in mango puree until well combined.
Pour the cheesecake mixture over the crust in the springform pan.
Bake for 60-70 minutes, or until the center is almost set. Cool on a wire rack for 10 minutes, then run a knife around the edge of the pan to loosen. Cool for 1 hour longer, then refrigerate for at least 4 hours or overnight.
Garnish with mango chunks and lime slices before serving.
