2 large eggs
1/2 cup whole milk
1 teaspoon vanilla extract
3 tablespoons unsalted butter, melted
1 1/2 cups diced apples (peeled, Granny Smith or Honeycrisp recommended)

Glaze:
1 cup powdered sugar
2 tablespoons milk or heavy cream
1/2 teaspoon vanilla extract

Directions:

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
In another bowl, whisk the eggs, milk, vanilla, and melted butter until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Gently fold in the diced apples, ensuring they are evenly distributed throughout the batter.

Scoop about 1/4 cup of batter for each fritter and drop it onto the prepared baking sheet, spacing them about 2 inches apart.
Flatten slightly with the back of a spoon.

Bake for 15–18 minutes, or until golden brown and cooked through.
Allow fritters to cool slightly on the baking sheet before transferring them to a wire rack.

Whisk together powdered sugar, milk, and vanilla until smooth.
Drizzle the glaze over the warm fritters or dip each fritter into the glaze for a thicker coating.

Let the glaze set for a few minutes before serving warm.
