Hawaiian BBQ Chicken in Foil Packets
Ingredients:
• 2 lbs Chicken Breasts (about 4 breasts)
• 2 Bell Peppers (any color), diced into big pieces
• ½ cup Barbecue Sauce
• 2 Tbsp Soy Sauce
• 4 slices Pineapple Rings (fresh or canned)
• ½ tsp Salt
• ½ tsp Pepper
Directions:
1. Get the Sauce Ready: Mix the barbecue sauce, soy sauce, salt, and pepper in a small bowl until everything’s blended well.
2. Prep the Grill or Campfire: Heat up your grill to medium or get your campfire set for cooking. Make sure it’s ready before moving forward.
3. Make the Foil Packets: Tear off 4 big pieces of heavy-duty aluminum foil and give them a light spray of non-stick cooking spray to prevent sticking. Put a chicken breast fillet in the middle of each piece of foil.
4. Layer the Goodies: Put a pineapple slice and some diced bell peppers on top of each chicken breast, spreading them out evenly among the foil packets.
5. Add Sauce: Drizzle about 1/4 cup of the barbecue mixture over each chicken foil packet, making sure each piece is nicely coated.
6. Seal the Packets: Carefully fold up the edges of the foil to make sealed packets, making sure there aren’t any gaps for juices to leak out during cooking. This keeps all the tasty flavors locked in.
7. Cook: Put the foil packets on the grill or campfire and cook for around 20 to 25 minutes. The chicken should be cooked through and reach an internal temperature of at least 165°F (75°C).
8. Serve: Open up the foil packets carefully, avoiding the hot steam, and transfer the contents onto serving plates. Serve hot and savor the tropical taste of this Hawaiian-style barbecue chicken!
