📌 Ingredients:
For the Lamb Chops:
8 lamb chops ( Frenched)
2 tbsp olive oil
4 garlic cloves (minced)
1 tbsp fresh rosemary (chopped)
1 tbsp fresh thyme (chopped)
Salt & black pepper (to taste)
1 tbsp Dijon mustard
1 tsp paprika
Creamy Mustard Herb Sauce:
1/2 cup heavy cream
1 tbsp Dijon mustard
1 tsp whole grain mustard (optional)
1 tsp fresh parsley or tarragon (chopped)
1 tbsp pan drippings or butter
Salt & pepper to taste
Garlic Mashed Potatoes:
2 lbs Yukon gold or red potatoes (peeled and cubed)
4 garlic cloves (boiled with potatoes)
4 tbsp butter
1/2 cup milk or heavy cream
Salt & pepper to taste
Roasted Asparagus:
1 bunch asparagus (trimmed)
1 tbsp olive oil
Salt & black pepper
1 tsp lemon juice or zest (optional)
👨🍳 Instructions:
Step 1: Marinate the Lamb
Mix olive oil, garlic, rosemary, thyme, mustard, salt, pepper, and paprika.
Rub lamb chops with the mixture and marinate for 30 mins (or overnight for best flavor).
Step 2: Make Garlic Mashed Potatoes
Boil potatoes with garlic cloves until fork-tender.
Drain and mash with butter, milk/cream, salt & pepper.
Whip until creamy but slightly chunky.
Step 3: Roast Asparagus
Toss asparagus with olive oil, salt, and pepper.
Roast at 400°F (200°C) for 10–12 mins until tender-crisp.
Step 4: Sear & Finish the Lamb
Sear lamb chops in a hot skillet 2–3 minutes per side.
Optional: finish in 400°F oven for 5 mins for medium doneness.
Rest 5 minutes before serving.
Step 5: Make Creamy Mustard Sauce
In the same pan, add drippings or butter.
Stir in cream, mustards, and herbs. Simmer until slightly thickened (about 3–4 mins).
Season to taste.
