Strawberry Poke Cake
Ingredients
For the Cake:
1 box white cake mix (plus ingredients listed on the box: eggs, oil, water)
1 box (3 oz) strawberry gelatin (Jell-O)
1 cup boiling water
½ cup cold water
For the Topping:
2 cups heavy whipping cream
½ cup powdered sugar
1 tsp vanilla extract
1½ cups fresh strawberries, sliced

Instructions
1. Bake the cake:
Prepare cake mix according to box instructions. Bake in a 9x13 inch pan. Let cool for 10 minutes.
2. Poke the cake:
Using a straw or skewer, poke holes all over the cake (about 1 inch apart).
3. Make strawberry filling:
Dissolve the strawberry gelatin in 1 cup boiling water. Stir in ½ cup cold water. Pour evenly over the warm cake. Refrigerate for at least 2 hours.
4. Make whipped topping:
Beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread over chilled cake.
5. Top it off:
Layer sliced strawberries across the top. Add a swirl of whipped cream and a halved strawberry for decoration if desired.
