Spiced Shrimp with Spinach and Olive Penne
Zesty Shrimp Penne with Spinach and Olives
Ingredients:
300g penne pasta
400g medium shrimp, peeled and deveined
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/4 teaspoon red pepper flakes (optional)
2 cups fresh spinach, roughly chopped
1/2 cup black olives, sliced
1/2 teaspoon salt
1/4 teaspoon black pepper
Juice of 1 lemon
2 tablespoons fresh parsley, chopped
Directions:
Cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
In a large skillet over medium heat, warm the olive oil.
Add the garlic and cook for about 30 seconds until fragrant.
Add the shrimp, paprika, cumin, red pepper flakes, salt, and black pepper. Cook for 2–3 minutes per side or until the shrimp turn pink and are cooked through.
Toss in the spinach and olives, stirring until the spinach wilts, about 1–2 minutes.
Add the cooked penne to the skillet, tossing everything together. Add reserved pasta water if needed for moisture.
Squeeze lemon juice over the pasta and sprinkle with fresh parsley before serving.
