White Chocolate Coconut Rocky Road Bars
Ingredients:
1 packet Tennis biscuits, roughly broken into chunks
1 cup mini marshmallows
½ cup desiccated coconut
200g white chocolate, melted
Optional: A handful of chopped dried fruit or nuts (e.g., cranberries, almonds, or cashews)
Instructions:
Line a square or rectangular baking tin with parchment paper.
In a large mixing bowl, combine the broken Tennis biscuits, mini marshmallows, and desiccated coconut.
If using, stir in your choice of dried fruit or nuts.
Pour the melted white chocolate over the dry ingredients and mix until everything is well coated.
Spoon the mixture into the lined tin and press down gently to even it out.
Refrigerate for at least 1 hour, or until set.
Once firm, remove from the tin and cut into bars or squares.
