Creamy Parmesan Pasta with Sautéed Garlic Butter Chicken
Ingredients:
For the Chicken Bites:
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
Salt and pepper to taste
1 teaspoon Italian seasoning
Fresh parsley, chopped (optional for garnish)
For the Creamy Parmesan Pasta:
12 oz fettuccine or your favorite pasta
2 tablespoons butter
2 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1/2 cup chicken broth
Salt and pepper to taste
Extra garlic butter (optional, for drizzling)
Directions:
Bring a large pot of salted water to a rolling boil. Cook your fettuccine (or preferred pasta) according to the package instructions until al dente. Drain and set aside while you prepare the rest.
Heat olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt, pepper, and Italian seasoning. Add them to the pan and cook for 6–8 minutes, stirring occasionally, until they’re golden and cooked through. Transfer to a plate and keep warm.
In the same skillet, reduce the heat to medium and melt 4 tablespoons of butter. Add the minced garlic and sauté for about 30 seconds, just until aromatic. Return the cooked chicken to the skillet and toss to coat in the rich garlic butter. Set aside.
In a separate pan, melt 2 tablespoons of butter over medium heat. Add minced garlic and cook briefly until fragrant. Stir in the chicken broth and heavy cream, bringing it to a gentle simmer. Gradually whisk in the Parmesan cheese until smooth and creamy. Season with salt and pepper to taste.
Add the cooked pasta into the Parmesan sauce and stir until the noodles are evenly coated. Divide the pasta among serving plates, top each with garlic butter chicken bites, and, if desired, drizzle with a spoonful of the remaining garlic butter from the pan.
Finish with a sprinkle of fresh parsley and serve immediately for a rich, flavorful meal.
