Deliciously Simple Gluten-Free Herb Chickpea Biscuits Recipe 🍽️💫
Ingredients:
1.5 cups (180g) Chickpea Flour
1/4 cup (30g) Tapioca Starch or Cornstarch
1 tablespoon Baking Powder
1/2 teaspoon Salt
1/4 cup (56g) Cold Solid Vegan Butter (cubed) or Cold Solid Coconut Oil
1 tablespoon Dried Herbs (like chives, parsley, dill mix)
3/4 cup (180ml) Unsweetened Plant-Based Milk (like almond or soy), cold
1 teaspoon Apple Cider Vinegar (mix into milk)
Directions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a large bowl, whisk together chickpea flour, tapioca starch, baking powder, salt, and dried herbs.
3. Add the cold cubed vegan butter or coconut oil to the flour mixture. Use a pastry blender, two knives, or your fingertips to cut the fat into the flour until the mixture resembles coarse meal with pea-sized crumbs.
4. Stir the apple cider vinegar into the cold plant milk. Pour the milk mixture into the flour mixture and stir gently with a fork until just combined. Do not overmix.
5. Turn the slightly sticky dough out onto a lightly floured surface (use GF blend). Gently bring it together (pat, don't knead) into a rough rectangle about 1/2 inch thick.
6. Cut out biscuits using a round cutter (about 2-2.5 inches). Press scraps together gently to cut more biscuits.
7. Place biscuits on the prepared baking sheet. Optionally, brush tops lightly with melted vegan butter or plant milk.
8. Bake for 12-15 minutes, or until golden brown and risen. Serve warm.
