Creamy Tuscan Chicken Linguine
🍝 A rich and comforting dish with seared chicken, sun-kissed tomatoes, spinach, and silky cream sauce — perfect for home or office indulgence.

Ingredients:
2 boneless, skinless chicken breasts

Salt & pepper to taste

1 tsp Italian seasoning

1 tbsp olive oil

3 cloves garlic, minced

1/2 cup cherry tomatoes, halved

2 cups fresh spinach

1/2 cup chicken broth

3/4 cup heavy cream

1/4 cup tomato paste

1/2 cup grated Parmesan cheese

8 oz linguine pasta

Fresh parsley or basil, chopped (for garnish)

Instructions:
Cook the Pasta:
Boil linguine in salted water until al dente. Reserve 1/2 cup pasta water, then drain and set aside.

Sear the Chicken:
Season chicken with salt, pepper, and Italian seasoning. In a skillet over medium heat, heat olive oil and sear chicken for 5–6 minutes per side until golden and cooked through. Remove and let rest.

Make the Sauce:
In the same skillet, sauté garlic for 30 seconds. Add cherry tomatoes and cook until they soften. Stir in tomato paste, broth, and cream. Simmer until slightly thickened, then stir in Parmesan and spinach. Let spinach wilt.

Combine:
Slice the chicken. Toss pasta with the sauce (add reserved pasta water if needed). Plate and top with sliced chicken. Garnish with chopped herbs.
