Cheesy beef burrito
Ingredients:
For the Beef Filling:
1 lb ground beef
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1/4 cup tomato sauce
1/4 cup beef broth (or water)
1/2 cup fresh spinach (optional, for added veggies)
1/2 cup diced tomatoes (optional)
1-2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
For the Burrito Assembly:
4 large flour tortillas
Sour cream (optional)
Salsa (optional)
Fresh cilantro (optional, for garnish)
Instructions:
1. Cook the Beef:
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and cook for 3-4 minutes until softened.
Add the minced garlic and cook for another 30 seconds until fragrant.
Add the ground beef to the skillet, breaking it up with a spoon as it cooks. Cook until browned, about 6-8 minutes.
Stir in the cumin, chili powder, paprika, black pepper, and salt. Cook for another 2 minutes to toast the spices.
Add the tomato sauce and beef broth, stirring to combine. Let it simmer for 5-7 minutes until the sauce thickens and the beef is fully cooked.
Stir in the spinach (if using) and diced tomatoes (if using) for extra flavor and texture.
2. Prepare the Tortillas:
Warm the flour tortillas in a dry skillet or microwave for 10-15 seconds so they become soft and pliable.
3. Assemble the Burritos:
Lay a warm tortilla flat on a clean surface.
Spoon a generous portion of the beef mixture into the center of the tortilla.
Sprinkle a handful of shredded cheese over the beef.
Fold in the sides of the tortilla and then roll it up tightly to enclose the filling.
4. Grill the Burritos (Optional):
Heat a non-stick skillet or grill pan over medium heat.
Place the burrito seam side down and cook for 2-3 minutes on each side until lightly browned and crispy, pressing gently with a spatula to help it crisp.
5. Serve:
Slice the burrito in half and garnish with fresh cilantro, sour cream, and salsa, if desired.
