For the vegetables:
600 g baby potatoes, halved 🥔

1 red bell pepper, chopped 🫑

1 carrot, sliced 🥕

1 small head of broccoli, in florets 🥦

1 tbsp olive oil

Salt, pepper, and mixed herbs to season
