Ingredients:

6 cups grated carrots

1 cup brown sugar

1 cup raisins

4 eggs

1 ½ cups white sugar

1 cup vegetable oil

2 tsp vanilla extract

1 cup crushed pineapple (drained)

3 cups flour

1 ½ tsp baking soda

1 tsp salt

4 tsp cinnamon

1 cup walnuts

Frosting (Optional):

½ cup butter, softened

8 oz cream cheese, softened

4 cups powdered sugar

2 tsp vanilla extract

Directions:

In a bowl, mix the grated carrots and brown sugar. Let this mixture sit for 1 hour to allow the carrots to release their juices and soften. Then stir in the raisins.

Preheat your oven to 350°F (175°C). Grease and flour two 10-inch round cake pans to prevent sticking.

In a large mixing bowl, beat together the eggs, white sugar, vegetable oil, vanilla extract, and drained crushed pineapple until well combined.

In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
