🛒 Ingredients:
For the chicken & potatoes:
8 bone-in, skin-on chicken thighs 🍗
700g baby potatoes, halved 🥔
3 tbsp olive oil
3 cloves garlic, minced 🧄
1 lemon, sliced + juice of half a lemon 🍋
1 tsp dried oregano
1 tsp dried thyme
1 tsp paprika
Salt and black pepper to taste
Fresh herbs (oregano, thyme, parsley) for garnish 🌿
👨🍳 Instructions:
Preheat oven to 200°C (400°F). In a large bowl, toss chicken thighs and halved baby potatoes with olive oil, garlic, lemon juice, and all seasonings. Spread everything evenly on a baking tray, skin side up. Nestle in lemon slices. Roast uncovered for 40–45 minutes, or until chicken skin is crispy and golden and potatoes are fork-tender. Garnish with fresh herbs and serve hot with lemon wedges for extra zest.
