Chimichurri Steak
Ingredients:
2 lbs flank steak
Salt and pepper to taste
For the Chimichurri Sauce:
1 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
4 cloves garlic, minced
1/4 cup red wine vinegar
1/2 cup extra virgin olive oil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste
Directions:
Season the flank steak generously with salt and pepper on both sides.
Preheat your grill to medium-high heat.
Grill the steak for 4-5 minutes per side, or until it reaches your desired level of doneness.
While the steak is grilling, prepare the chimichurri sauce. In a bowl, combine chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, dried oregano, and red pepper flakes. Season with salt and pepper to taste.
Once the steak is done, remove it from the grill and let it rest for 5 minutes before slicing.
Slice the steak against the grain into thin strips and serve with the chimichurri sauce drizzled over the top.
