Guacamole Grilled Cheese Sandwich
Ingredients:
4 slices sandwich bread
4 tablespoons butter, softened
1 ripe avocado, peeled and mashed
1 tablespoon lime juice
Salt and pepper, to taste
4 slices bacon, cooked until crispy
1/2 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
2 tablespoons chopped fresh cilantro (optional)
Directions:
Spread softened butter on one side of each slice of bread.
In a small bowl, mix together mashed avocado, lime juice, salt, and pepper.
Divide the mashed avocado mixture evenly among two slices of bread, spreading it on the unbuttered side.
Top each avocado-covered bread slice with 2 slices of cooked bacon, followed by equal amounts of shredded cheddar and Monterey Jack cheese.
Sprinkle chopped cilantro over the cheese, if using, and top with the remaining slices of bread, buttered side facing out.
Heat a skillet over medium heat. Place the sandwiches in the skillet and cook until the bread is golden brown and crispy, and the cheese is melted, about 3-4 minutes per side.
Remove from the skillet and let cool slightly before serving.
