Pan-Fried Fish with Lemon Butter Sauce
Ingredients:
4 fillets of white fish (such as tilapia or cod)
Salt and pepper to taste
1/2 cup all-purpose flour
2 tablespoons olive oil
2 tablespoons butter
2 cloves garlic, minced
Juice of 1 lemon
Zest of 1 lemon
Fresh parsley, chopped for garnish
Directions:
Begin by seasoning the fish fillets with salt and pepper on both sides. Dredge each fillet in flour, shaking off any excess.
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the fish fillets and cook for about 3-4 minutes on each side, or until they are golden brown and cooked through. Remove the fish from the skillet and set aside on a plate.
In the same skillet, reduce the heat to medium and add the butter. Once melted, stir in the minced garlic and sauté for about 30 seconds until fragrant.
Add the lemon juice and zest to the skillet, stirring to combine. Allow the sauce to simmer for a minute to meld the flavors.
Return the fish to the skillet, spooning the lemon butter sauce over the fillets to coat them. Cook for an additional minute to heat through.
