DOUBLE CHOCOLATE ICE CREAM SANDWICHES
You Will Need (Cookies):
1/2 cup butter (softened)
1/2 cup brown sugar
1/4 cup granulated sugar
1 egg
1 tsp vanilla extract
1 cup all-purpose flour
1/3 cup cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup chocolate chips
Filling:
1½ cups chocolate ice cream (slightly softened)
Optional: melted chocolate for drizzling, chocolate chips for rolling edges

Instructions:
1. Preheat oven to 350°F (175°C). Line a tray with parchment paper.
2. Cream butter and sugars. Beat in egg and vanilla.
3. Add flour, cocoa, baking soda, salt. Mix in chocolate chips.
4. Scoop dough into balls and flatten slightly.
5. Bake 8–10 minutes. Cool completely.
6. Scoop ice cream onto one cookie, press another on top.
7. Roll edges in chocolate chips or drizzle with melted chocolate. Freeze 20 minutes before serving.
