🔸 Ingredients:
✔️ 1 box vanilla cake mix (or homemade vanilla cake batter) 🎂
✔️ 1 cup buttermilk 🥛
✔️ 1/2 cup vegetable oil 🛢️
✔️ 3 large eggs 🥚
✔️ 1 teaspoon vanilla extract 🍦
✔️ 2 (8 oz) packages cream cheese, softened 🧀
✔️ 1 cup granulated sugar 🍚
✔️ 2 large eggs 🥚
✔️ 1 teaspoon vanilla extract 🍦
✔️ 1 tablespoon flour 🌾
✔️ 2 cups fresh or canned peach slices 🍑
✔️ 1/2 cup peach jam or preserves 🍯
✔️ 1 tablespoon lemon juice 🍋
✔️ 1/4 teaspoon cinnamon 🍂
✔️ 1/2 cup all-purpose flour 🌾 (for streusel)
✔️ 1/4 cup brown sugar 🍂 (for streusel)
✔️ 1/4 cup unsalted butter (cold and cut into cubes) 🧈 (for streusel)
🔸 Direction:
1️⃣ Prepare the Cake: Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or a springform pan. In a large mixing bowl, combine the cake mix, buttermilk, vegetable oil, eggs, and vanilla extract. Mix until smooth. Pour the batter into the prepared cake pan and set aside.
2️⃣ Prepare the Cheesecake Layer: In a separate bowl, beat the softened cream cheese with the granulated sugar until smooth and creamy. Add the eggs one at a time, beating after each addition. Stir in the vanilla extract and flour until fully combined. Pour the cheesecake mixture over the cake batter in the pan, smoothing it evenly.
3️⃣ Bake the Cake: Bake the cake at 350°F (175°C) for 40-50 minutes, or until a toothpick inserted into the cake portion comes out clean. The cheesecake layer should be set and firm. Remove the cake from the oven and allow it to cool completely in the pan.
4️⃣ Prepare the Peach Topping: While the cake is cooling, combine the peach slices, peach jam, lemon juice, and cinnamon in a small saucepan. Cook over medium heat for about 5-7 minutes, stirring occasionally until the peaches soften and the sauce thickens. Let the peach topping cool slightly before spooning it over the cake.
5️⃣ Prepare the Streusel Topping (Optional): For a crunchy topping, mix the flour, brown sugar, and cold butter in a bowl. Use a pastry cutter or your fingers to cut the butter into the dry ingredients until crumbly. Sprinkle the streusel mixture over the cake before baking.
6️⃣ Assemble the Cake: Once the cake is completely cooled, top it with the peach mixture. Optionally, drizzle with a bit more peach preserves or caramel sauce. Slice and serve! 🍽 Enjoy!
