Creamy Sun-Dried Tomato and Chicken Fettuccine is pure pasta bliss. Juicy chicken, rich Parmesan cream sauce, and tangy sun-dried tomatoes all twirled up in one comforting dish.

Ingredients:

12 oz fettuccine pasta
2 boneless, skinless chicken breasts, sliced into thin strips
1 cup heavy cream
½ cup grated Parmesan cheese
⅓ cup sun-dried tomatoes, chopped
1 small onion, finely chopped
2 garlic cloves, minced
1 tablespoon olive oil
1 teaspoon dried basil
½ teaspoon red pepper flakes (optional)
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)

Directions:

Start by cooking the fettuccine in a big pot of salted boiling water until perfectly al dente. Scoop out about half a cup of the pasta water before draining just in case you need it later to loosen the sauce.
While the pasta cooks, heat a splash of olive oil in a large skillet over medium heat. Season your sliced chicken generously with salt and pepper, then cook it in the hot skillet until golden and fully cooked through, about 6–8 minutes. Transfer it to a plate and set it aside.
In that same skillet, toss in the chopped onion and let it soften for a couple of minutes, scraping up any browned bits from the chicken. Add the garlic next, letting it cook just long enough to become aromatic about 30 seconds.
Now stir in the chopped sun-dried tomatoes and give them a minute or two to warm through and release their flavor. Pour in the heavy cream, stir everything together, and bring it to a soft simmer. Sprinkle in the Parmesan cheese, stirring until the sauce becomes smooth and creamy. Add the dried basil and red pepper flakes if you want a kick of heat.
Slide the chicken back into the pan and stir to coat it in the luscious sauce. Add the drained fettuccine and toss everything together until it’s well combined. If the sauce feels a little too thick, that reserved pasta water will help thin it out to your liking.
Finish with a handful of fresh chopped parsley, and serve it creamy, cheesy, and full of flavor in every bite.
