Mediterranean Grilled Chicken Salad Bowl

Ingredients:
🍗 1 grilled chicken breast (sliced)
🥬 2 cups romaine or mixed greens
🍅 1/2 cup cherry tomatoes (red & yellow, halved)
🫒 1/4 cup Kalamata and green olives
🧅 1/4 cup red onion (sliced)
🥒 1/2 cucumber (sliced)
🧀 2 tbsp crumbled feta cheese
🌿 Fresh parsley (chopped, optional)
🧂 Salt & pepper to taste
🫒 Olive oil + 🍋 lemon juice (for dressing)
Instructions:
Grill the Chicken 🍗
Season the chicken breast with olive oil, salt, pepper, garlic, and herbs. Grill until golden and cooked through. Slice thinly.
Prep the Veggies 🥗
Wash and chop the lettuce, slice the cucumber and onion, halve the tomatoes and olives.
Assemble the Bowl
Add the greens to a bowl.
Arrange the chicken, tomatoes, cucumbers, olives, onion, and feta on top.
Finish with Dressing ✨
Drizzle with olive oil and a squeeze of lemon juice.
Add salt, pepper, and parsley to taste.
Tips:
You can add quinoa or chickpeas for extra protein.
Use hummus or tzatziki on the side for a Mediterranean twist!
