☀️ Good Morning Sweet Potato Flatbread
Ingredients:
- 1 cup mashed cooked sweet potato (200g)
- 1 cup gluten-free all-purpose flour blend
- 1/4 cup chia seeds
- 1 tablespoon olive oil (15ml)
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon salt
- Water as needed
Directions:
1. In a large bowl, combine mashed sweet potato, gluten-free flour, chia seeds, olive oil, cinnamon, ginger, and salt. Mix well.
2. Gradually add water, a tablespoon at a time, until a soft, pliable dough forms.
3. Divide dough into 6-8 portions.
4. On a lightly floured surface, roll out each portion into a thin flatbread.
5. Heat a lightly oiled skillet or griddle over medium heat.
6. Cook flatbreads for 2-3 minutes per side, or until golden brown and cooked through.
7. Serve warm.
