Benedictine spread gets its name from the creator of the recipe, Jennie Carter Benedict, a cookbook author and restaurateur from Louisville, Ky. who created the sandwich in the early 1900s. It is sometimes refered to as Kentucky Benedictine, and is often served at Kentucky Derby parties.

Benedictine Tea Sandwiches
2 (8-oz.) pkgs. cream cheese, softened
1/2 cup green onions, minced (both onion & greens)
1 cup cucumber, peeled, seeded, and shredded
4 Tbsp. dill, chopped
2 Tbsp. mayonnaise
1 Tbsp. sour cream
salt 'n pepper to taste
2 loaves soft sliced white bread (homemade, if possible)
Mix all the ingredeints, except bread together in a mixing bowl. Spread onto bead forming a sandwich, trim away sandwich crusts, and cut each sandwich into 4 triangles with a serrated knife to create tea sandwiches.
