🧀🌶️ Reuben Jalapeño Grilled Cheese Soup 🌶️🧀
Ingredients:
1 tablespoon olive oil
1 onion, diced
3 cloves garlic, minced
1-2 jalapeños, seeded and chopped (adjust to taste)
4 cups beef broth
1 can (15 oz) diced tomatoes, undrained
1 teaspoon dried oregano
Salt and black pepper, to taste
1 cup heavy cream
2 cups shredded Swiss cheese
1 cup sauerkraut, drained
4 slices rye bread, buttered
4 slices corned beef, chopped
Directions:
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and chopped jalapeños, cooking for an additional 2 minutes.
Pour in the beef broth and diced tomatoes, then add the dried oregano, salt, and black pepper. Bring the mixture to a simmer and cook for about 10 minutes.
Reduce the heat and stir in the heavy cream and shredded Swiss cheese, mixing until the cheese is melted and the soup is creamy.
In a separate skillet, grill the buttered rye bread slices over medium heat until golden brown on both sides. Add the chopped corned beef and sauerkraut to the bread, creating a grilled cheese sandwich. Remove from the skillet and cut into bite-sized pieces.
