Ingredients:
1 cup cottage cheese (full-fat or low-fat)
1/2 cup Greek yogurt (plain, unsweetened)
2 large eggs
1/3 cup honey or maple syrup
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp salt
1 1/2 cups rolled oats
1 tsp baking powder
1 cup fresh or frozen blueberries (plus extra for topping)
1/4 cup chopped nuts (optional, for topping)
Directions:
Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper.
In a large mixing bowl, whisk together the cottage cheese, Greek yogurt, eggs, honey (or maple syrup), vanilla extract, cinnamon, and salt until well combined.
Stir in the rolled oats and baking powder until fully incorporated. Gently fold in the blueberries, ensuring they are evenly distributed.
Pour the mixture into the prepared baking dish and spread it out evenly.
If desired, sprinkle extra blueberries and chopped nuts on top for added texture and flavor.
Bake for 35-40 minutes, or until the top is golden brown and the bake is set in the middle. A toothpick inserted in the center should come out clean.
