Old-Fashioned Vegetable Soup
Ingredients:
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, diced
- 1 can of diced tomatoes
- 6 cups of vegetable broth
- 1 cup of green beans, chopped
- 1 cup of corn kernels
- 1 potato, diced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. In a large pot, sauté the onion, carrots, and celery until softened.
2. Add in the diced tomatoes, vegetable broth, green beans, corn, and potato. Season with salt and pepper.
3. Bring the soup to a boil, then reduce heat and let simmer for about 20 minutes, or until the veggies are tender.
4. Serve hot, garnished with fresh parsley.
