๐ช Blueberry Cheesecake-Stuffed Cookies ๐
Ingredients
For the Cookie Dough
225 g (1 cup) unsalted butter, softened (or vegan butter)
150 g (ยพ cup) granulated sugar
50 g (ยผ cup) light brown sugar
1 large egg
1 egg yolk
1ยฝ tsp vanilla extract
1 tsp baking soda
ยผ tsp salt
300 g + 24 g (โ 2โ
cups + 3 tbsp) all-purpose flour
110 g (ยพ cup) small blueberries (fresh or frozen)
For the Cheesecake Filling
170 g (about ยพ cup) cream cheese (or vegan cream cheese)
30 g (โ ยผ cup) powdered sugar
If using non-vegan cream cheese, you may increase powdered sugar slightly to ensure firmness
Instructions
Prepare the cheesecake centers.
In a bowl, beat the cream cheese and powdered sugar until silky and uniform. Using a small spoon, scoop 20 generous teaspoons of this mixture onto a parchment-lined plate. Freeze these for about 1 hour (or until firm but still pliable).
Mix the cookie dough.
While the filling chills, beat the softened butter with granulated and brown sugars until pale and fluffy. Add the egg, egg yolk, and vanilla; mix until smooth.
Add dry ingredients.
Sift in baking soda, salt, and flour. Gently fold until just combined (donโt overmix). Carefully stir in the blueberries โ especially if frozen โ so you donโt bleed too much color.
Form the cookies.
Preheat oven to 175 ยฐC (350 ยฐF). Line baking trays with parchment. Portion the cookie dough into 20 mounds (about 2 Tbsp each). Take the frozen cheesecake scoops and press one into the center of each dough mound. Encase the filling completely by pinching the dough around it. Chill the assembled cookies in the fridge while you bake in batches.
Bake.
Place one tray in the oven for 8โ10 minutes until edges are set but centers still soft. Meanwhile, keep the next batch chilled. After baking, allow cookies to cool on the tray for a few minutes, then transfer to a wire rack to finish cooling.
Storage.
Store cookies in an airtight container in the refrigerator for up to 3โ4 days. For longer keeping, freeze (in a zipper bag) for up to 2 months; thaw in the fridge before serving.
