Spicy Lamb Ragu with Penne

Savory Spiced Lamb Ragu Tossed with Penne Pasta

Ingredients:

1 lb (450g) ground lamb

12 oz (340g) penne pasta

2 tablespoons olive oil

1 onion, finely chopped

3 cloves garlic, minced

1 red chili pepper, finely chopped (adjust to taste)

1 can (14 oz) crushed tomatoes

2 tablespoons tomato paste

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon ground cinnamon

1/2 teaspoon red pepper flakes

Salt and black pepper to taste

1/4 cup chopped fresh parsley

1/4 cup chopped fresh basil

Grated Parmesan or pecorino cheese for garnish (optional)

Directions:

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

In a large skillet or sauté pan, heat the olive oil over medium heat.

Add the chopped onion and sauté for 3-4 minutes until translucent.

Stir in the garlic and chili pepper, cooking for another minute until fragrant.

Add the ground lamb to the skillet and cook, breaking it apart with a spoon, until browned and cooked through.

Stir in the tomato paste, crushed tomatoes, cumin, paprika, cinnamon, and red pepper flakes. Mix well to combine.

Lower the heat and let the ragu simmer for 15-20 minutes, stirring occasionally, until thickened. Season with salt and black pepper to taste.

Add the cooked penne pasta directly into the skillet with the ragu and toss to coat the pasta thoroughly.

Garnish with chopped parsley, basil, and a sprinkle of grated cheese if desired.

Serve hot and enjoy!
