"Made these special occasion baked mashed potatoes for four people and all of the leftovers were gone in 2 days because my husband couldn't stay out of it. Truly was a huge success
Ingredients:
2 lbs Yukon Gold potatoes, peeled and cubed
4 tbsp unsalted butter
1/2 cup sour cream
4 oz cream cheese, softened
1/3 cup milk (warm)
1 cup shredded sharp cheddar
1/4 cup grated Parmesan cheese
Salt and black pepper to taste
1/4 tsp garlic powder (optional)
Extra butter and cheese for topping
Directions:
Boil potatoes in salted water until fork-tender (about 15–20 mins). Drain well.
In a large bowl, mash the potatoes with butter, cream cheese, and sour cream until smooth.
Slowly add warm milk, then stir in cheddar, Parmesan, salt, pepper, and garlic powder.
Spread the mashed potatoes into a greased 8x8 baking dish.
Dot the top with extra butter and a sprinkle of cheese.
Bake at 375°F (190°C) for 25–30 mins, until golden and bubbly on top.
Let cool slightly before serving.
