Spicy Teriyaki Chicken with Broccoli Penne
Fiery Teriyaki Glazed Chicken over Roasted Broccoli Penne
Ingredients:

1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
12 ounces penne pasta
3 cups fresh broccoli florets
3 tablespoons olive oil, divided
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
2-3 tablespoons sriracha sauce (adjust to your spice preference)
1/2 cup teriyaki sauce
2 tablespoons honey
1 tablespoon sesame oil
1 red bell pepper, sliced
3 green onions, sliced, plus more for garnish
1 tablespoon sesame seeds
1/2 teaspoon red pepper flakes (optional for extra heat)
Salt and pepper to taste

Directions:

Preheat oven to 425°F (220°C). On a large baking sheet, toss broccoli florets with 1 tablespoon olive oil, salt, and pepper. Roast for 15-20 minutes until edges are crispy and broccoli is tender.
Meanwhile, bring a large pot of salted water to a boil. Cook penne according to package directions until al dente. Reserve 1/2 cup pasta water before draining.
In a small bowl, whisk together teriyaki sauce, honey, sriracha, and sesame oil. Set aside.
Season chicken pieces with salt and pepper. In a large skillet or wok, heat the remaining 2 tablespoons olive oil over medium-high heat.
Add chicken to the skillet and cook for 5-6 minutes, stirring occasionally, until golden brown and cooked through (165°F internal temperature).
Add minced garlic, grated ginger, and red bell pepper to the skillet. Cook for 2 minutes until fragrant and peppers begin to soften.
Pour the teriyaki-sriracha sauce into the skillet and bring to a simmer. Cook for 2-3 minutes until the sauce thickens slightly and coats the chicken.
Add the drained pasta to the skillet along with the roasted broccoli and sliced green onions. Toss everything together to coat with the sauce. If the mixture seems dry, add some of the reserved pasta water.
Sprinkle with sesame seeds and additional red pepper flakes if desired.
Serve hot, garnished with additional sliced green onions.
