Preheat the oven to 200°C (400°F). Pound the chicken breasts to an even thickness. Set up a breading station: flour in one bowl, beaten eggs in another, and breadcrumbs mixed with garlic powder, paprika, salt, and pepper in a third. Dredge each piece of chicken in flour, dip in egg, then coat in breadcrumbs. Arrange on a greased baking sheet and spray lightly with oil. Bake for 20 minutes, flip, top each cutlet with mozzarella, and bake for another 5–7 minutes or until golden and melted. Garnish with parsley and serve hot!
