Apple Cranberry Chicken Salad platter with butter lettuce, cucumber slices, carrot sticks, half an avocado, olives and pita crackers for lunch. This chicken salad was made with leftover rotisserie chicken and savory, sweet and delicious. I used mayo but you can also sub Greek mayo or mix it up depending on your preference. Sometimes I like to add chopped walnuts but this time I left them out. Here’s how I made it:

Apple Cranberry Chicken Salad
Ingredients:
- 2 cups cooked chicken breast, cubed or shredded. (I used a store bought rotisserie chicken)
- 1 stalk celery, chopped.
- 2 tablespoons red onion, chopped.
- ½ cup dried cranberries.
- ½ honeycrisp apple diced.
- 1-2 tablespoons fresh dill, chopped.
- 1 tablespoon fresh lemon juice.
- 2 tablespoons mayonnaise or sub Greek yogurt.
- Walnuts or pecans chopped, optional.

Add all the ingredients to a large bowl and mix well. Season with salt and pepper to taste. Serve over salad, with crackers, lettuce wraps or on toast.
