Grilled Herb Chicken with Creamy Dressing & Salad
Ingredients:
For the chicken:
2 boneless chicken breasts
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and black pepper to taste
Fresh herbs (parsley, chives)
For the dressing:
½ cup Greek yogurt or sour cream
1 tbsp lemon juice
1 tbsp chopped chives
Salt & pepper to taste
For the salad:
Mixed greens (lettuce, arugula, spinach)
Optional: roasted sweet potatoes, sliced radish, or cucumbers
Instructions:
1. Marinate chicken in olive oil, garlic powder, paprika, salt, and pepper. Let it sit for at least 30 minutes.
2. Grill or roast the chicken at 400°F (200°C) for 20-25 minutes until cooked through.
3. Mix dressing ingredients in a bowl and chill.
4. Assemble the salad with greens and any optional toppings.
5. Slice the chicken and place on top. Drizzle with dressing and garnish with herbs.
